General Conference Potato Cinnamon Rolls

I got this recipe from one of my BYU freshman roommates, Nancy, who got it from her mother Elaine. I traditionally make these for General Conference because who doesn't need yummy cinnamon rolls to keep them awake while watching 8 hours of TV in one weekend!!

 
Ingredients

  • 2 TB. yeast
  • 1 cup water
  • ~ 2 cups sugar
  • 1 medium potato
  • 2 eggs
  • 2 cups milk
  • 3 ½ tsp. salt
  • 4 tsp. baking powder
  • 5-6 cups flour
  • 1 ½ cubes margarine
  • 2 cups powdered sugar
  • ½ tsp vanilla

Directions

1. Start with the yeast:
  • 2 TB. yeast dissolved in 1 cup warm water
  • Add 2 TB. sugar
  • Dissolve yeast and sugar in water
2. Add to the yeast mixture:
  • 1 medium cooked potato (no skin, mashed)
  • 2 eggs
  • 2 cups milk (scalded)
  • 1 ½ cups sugar
  • 3 ½ tsp. Salt
  • 4 tsp. Baking powder
  • 5 cups flour
3. Mix together with mixer.
4. Then add:
  • 1 ½ cubes margarine (melted) 
  • Rest of the flour (about 5 more cups, or more if needed)
5. To finish it off:
  • Knead 10 minutes.
  • Raise twice.
  • After second raising, divide dough in half – do not punch down the 2nd time.
  • Let rest 10 minutes.
  • After the 10 minutes are up, preheat the oven to 375°, then roll each dough ball into a rectangle and spread with butter, brown sugar, and cinnamon
  • Roll and cut with thread or string.
  • Bake at 375° for 20 minutes.
  • While the rolls are baking, make the glaze
  • Drizzle the glaze on top after they come out of the oven

Glaze:
2 cups powdered sugar
½ tsp vanilla
3 tablespoons water
